Victorinox’s 8” Chinese cleaver has a round handle to allow for a pivot point when making cutting strokes. The wide blade keeps the fingers well off the cutting surface and also serves as a scoop to transfer food to a wok. A slight curvature can be found in the blade to provide a rocking motion for chopping similar to a chef’s knife.
